Spanish hake

Ingredients (4 servings):

  • 700g hake fillet
  • 2 tbsp of olive oil
  • 1 tbsp of butter
  • 1 onion
  • 3 cloves of garlic
  • 1 tbsp of wheat flour
  • 1/2 tsp of sweet paprika
  • 225grams of sprouted beans
  • 1.5 cups of fish broth
  • 2/3 cups of dry white wine
  • 2 tbsp of dry sherry
  • 16-20 fresh mussels
  • parsley, salt and pepper

Method of preparaion:

Heat olive oil and butter in a saucepan, fry the chopped onion for 5 minutes until soft. Add the chopped garlic and cook more for 1-2 minutes. Mix flour with paprika and sprinkle the hake pieces. Fry the hake on both sides in oil, where have been fried onion and garlic. Then add chopped beans, broth, white wine and sherry. Season with salt and pepper to taste, bring to a boil and stew for 2-3 minutes. Add prepared mussels and chopped parsley, cover and simmer until the mussels will open. Discard the unopened mussels. Served in warmed bowls.
