Sterlet with champignons
Ingredients (4 servings):
- 1kg of sterlet
- 3 tbsp of breadcrumbs
- 100g of butter
- 4-5 champignons
- 1/4 lemon
Method of preparaion:
Gut sterlet and cut on pieces 1.5-2 cm. Then sprinkle with breadcrumbs and fry on both sides in butter until tender.
In a saucepan mix the chopped mushrooms, 1 cup of water (or broth), squeeze the juice of 1/2 lemon, sprinkle with salt and pepper to taste, and simmer until cooked. Serve the fish with the lemon slices and herbs. Pour with received mushroom sauce.
