Lyons salad

Lyons salad

Ingredients (4 Servings):

  • 10 quail eggs
  • 10 cherry tomatoes
  • 300g mushrooms
  • 1 bunch of green onions
  • 250g salad mix
  • dill and parsley
  • 2 tbsp vegetable oil
 

Dressing:

  • 100g mayonnaise
  • 1 tbsp lemon juice
  • salt and pepper to taste
  • 1/2 tsp provencal herbs

Method of preparation:

Boil quail eggs in boiling water for 5 minutes, cool and peel. Cut in half cherry tomatoes and eggs. Tear salad. Chop onions and herbs. Wash mushrooms, cut into thin slices and fry until golden brown. Transfer to a paper towel to soak up excess fat and cool.

Dressing:

Mix together mayonnaise, lemon juice, salt, pepper, and provencal herbs.

Mix all ingredients in a large salad bowl and pour over the dressing.
