Shrimp salad with avocado

Ingredients (2 Servings):

  • 60ml white wine vinegar
  • 60ml olive oil
  • 1 sliced ​​green onion
  • 200g boiled and peeled shrimps
  • 1 avocado
  • lettuce leaves
  • lemon slices
  • roasted nuts to taste
  • cilantro or parsley to taste

Method of preparation:

Mix together in a bowl olive oil, vinegar and green onion. Cut each shrimp in half (or more - depending on size of shrimp). Add shrimps to mixture.
Arrange lettuce leaves on plates. Cut avocado in half, remove pit. Use spoon to remove the pulp to make a mold. Slice pulp and mix together with shrimps. Put halves on a plate with lettuce leaves.
Arrange shrimp mixture into avocado halves. Sprinkle with nuts and cilantro. Serve with lemon wedges.
