Fish in lemon-saffron sauce with potatoes
Ingredients (4 Servings):
- 300g of salmon
- 300g of sturgeon
- 3 potatoes
- 100ml of dry white wine
- 200ml of olive oil
- 1 tbsp of ghee
- 2 tbsp of sour cream
- salt
- white pepper
- basil
Sauce
- 500ml of cream (33%)
- 2 tbsp fish broth
- lemon juice
- saffron
- salt and black pepper
Method of preparation:
- Wash the fish and prepare to marinate. Pour with white wine and olive oil, sprinkle with salt and pepper to taste, add basil. Marinate for 2 hours. Then fry the fish on the grill until form a crust. Transfer to a baking dish and bake in the oven at 180 C (360 F) until cooked.
- Peel the potatoes, cut into thin slices and fry in oil until golden. Then add the sour cream and bake in the oven until cooked at 180 C (360 F).
Sauce:
Boil the cream until thick, add the saffron, fish broth and lemon juice, sprinkle with salt and pepper to taste.
Before serving pour with sauce cooked fish. Served with potatoes and sour cream.
