Fish under salt

Ingredients (2 Servings):

  • One big fish
  • 3 eggs
  • 1kg of coarse salt
  • dry white wine
  • dill
  • 200g of butter

Method of preparation:

Preheat oven to 200 C (390 F).  Cover oven-tray with salt, put the unpeeled fish, abundantly cover with salt. Bake in the oven until cooked. Remove salt and squama off cooked fish. Serve with sauce.

Sauce:

Boil eggs, cool and cut. Wash the dill and chop. Pour with wine the heated pan. In the boiling wine gradually add butter stirring constantly. Pour with prepared liquid the eggs and dill in gravy boat, stir.
