Grilled salmon with vegetables

Ingredients (8 servings):

Vegetables:

  • 50g of butter
  • 750g of potatoes
  • 250g of zucchini
  • 250g of green onions with bulb
  • 250g of carrots
  • 250g of broccoli
  • nutmeg
  • 2 tsp of thyme 
  • 50ml white wine

Fish:
  • 1kg of salmon
  • 2 tbsp vegetable oil
  • 1 lemon
  • 100 grams of butter

 

Method of preparaion:

  1. Plate for baking grease with butter. Peel potatoes, cut in half and place it in a form. Clean and wash the vegetables. Zucchini cut lengthwise into thin slices. Cut the bulb of onions leaving little green shoots.
  2. Wrap vegetables in slices of zucchini and put on the potatoes. Sprinkle with spices, pour with wine, and then cover with buttered foil. Vegetables bake in oven for 35 minutes at 180C (360 F).
  3. Cut salmon into portions pieces, marinate in vegetable oil with pepper. Bake on the grill for 4-5 minutes on each side. Serve with roasted vegetables.
