Viennese schnitzel
Ingredients (1 Serving):
- 1 chicken or turkey breast
- 1 egg
- vegetable oil
- some flour
- breadcrumbs
- 1/2 lemon
Method of preparation:
Cut breast lengthwise in half, but not fully and deploy as a butterfly. Flatten to a thickness of 5 mm with a meat tenderizer between the greased sheets of parchment paper. Sprinkle with a salt and pepper to taste, roll in flour, beaten egg and breadcrumbs. Transfer to a plate and put into fridge for 15 minutes to strengthen a breading. Fry in the oil in a cast iron skillet on medium-high heat for 3 minutes, all the while scooping spoon the oil from the pan and pour the schnitzel from above. Turn over the schnitzel, fry more for 1-2 minutes until golden brown, transfer to a paper towel to stack the extra fat. Serve immediately with lemon.
