Chinese chicken salad
Ingredients (4 Servings):
- 700g chicken breasts
- 250ml water
- 2 tbsp of rice vinegar
- 2 tsp Dijon mustard
- 2 tsp of sesame oil
- 2 tsp of grated fresh ginger
- 1 tsp of soy sauce
- 3 tbsp vegetable oil
- salt, ground black pepper and leeks
Method of preparation:
Boil the chicken breasts in the water for 15-20 minutes until tender, turning occasionally. Take out the meat and cool the broth. Chicken cut into cubes. Broth bring to a boil again over high heat, boil for 6-7 minutes. Put in a salad bowl sliced chicken, pour the broth. In a separate bowl, whisk together vinegar, mustard, sesame oil, grated ginger, soy sauce, salt and pepper to taste. During whipping, slowly add the vegetable oil. Pour the prepared dressing over the chicken. Add the chopped leeks and mix.
