Kitchari recipe

Ingredients (4 Servings):

  • 1 cup of cooked rice (basmati)
  • 1 smoked haddock (cod, mackerel)
  • 1 cup of milk
  • 1-2 tbsp ghee
  • butter
  • 1 onion
  • 4 boiled eggs
  • 1 tsp of cumin, turmeric, mustard seeds
  • parsley
  • lemon juice
  • salt

Method of preparation:

Boil the eggs for 8 minutes, cool. 

Cook rice: 

Add rice into boiling water (in a ratio of water to rice 2:1), bring to a boil, cook covered over low heat 5 minutes. Remove from heat, stir stick, then cover and let stand for 15-20 minutes. 
Cut smoked fish lengthwise, deploy and put into the pan, add milk, bring to a boil, add bay leaf and cook over low heat for 10-15 minutes. Remove the fish from heat, remove the skin and bones, cut into pieces. Peel the onion, cut into thin half-rings and fry over medium heat in butter until soft, add the mustard seeds, cumin, turmeric, after a minute add cooked rice, fish, coarsely chopped parsley, mix well. Warm, add the quartered eggs, butter, sprinkle with salt and lemon juice (optional), mix again. Serve immediately.
