Rice pudding recipe

Rice pudding with vanilla recipe

Ingredients (2 Servings):

  • 100g of whole grain rice
  • 500ml milk
  • 1/2 tsp of ground vanilla
  • 1/2 zest of lemon
  • 50-100g sugar
  • 10g gelatin
  • 250ml water
  • 200 ml cream (30%)
  • 1 tbsp lemon juice
  • nuts, dried fruits
  • chocolate for decoration - to taste

 

Method of preparation:

  1. Cook rice in milk with vanilla, zest and half of sugar (25-50 grams) over low heat about 30 minutes. Cover and let it stand more half hour.
  2. Dissolve gelatin in a small amount of hot water and add to the rice, mix and leave until start of solidifying. Beat up cream into a foam, add to the rice and mix.
  3. Put in the moistened with cold water cooking molds. Then put in fridge for 1.5-2 hours. After solidification transfer rice to a plate.
  4. Serve with chocolate, nuts and dried fruit - to taste.
